The University of Copenhagen’s Department of Food Science is seeking a highly motivated PhD candidate to join a groundbreaking research project called PROFERMENT. This fully funded position focuses on using bacteria (Bacillus) and molds to enhance the nutritional value, taste, and texture of plant-based foods.
Project Goal:
PROFERMENT aims to develop methods for large-scale fermentation of plant-based materials, transforming them into nutritious and delicious foods.
Your Role:
- Investigate how Bacillus bacteria can improve the protein content and digestibility of plant-based foods.
- Explore the safety aspects of using Bacillus in these fermentations.
- Analyze the potential formation of unwanted compounds during fermentation.
- Gain expertise in both wet-lab techniques and bioinformatics.
- Collaborate with other researchers on the project.
Who We Are Looking For:
- Master’s degree in Biology, Food Science, Biotechnology, or a related field.
- Strong background in food microbiology, molecular biology, or plant-based foods is a plus.
- Experience with solid-state fermentations is preferred.
- Excellent English communication skills.
- Curiosity and a passion for food science, fermentation or bioinformatics.
